The Timber Hearth at Cordillera – Located at the Mountain Course Clubhouse, The Timber Hearth at Cordillera is a year-round favorite. This handsome restaurant serves imaginative American cuisine with a distinctive western flair. Timber Hearth's three-story river rock fireplace, cozy furniture, and picture windows overlooking the golf course provide an unforgettable dining experience. During the winter, horse-drawn sleigh rides depart The Timber Hearth for starry tours of the moonlit landscape. Grouse on the Green – Enjoy an authentic, Irish pub-style experience at Grouse on the Green, which features an interior designed in Ireland, then shipped to Cordillera for installation. Adding to the Irish pub ambience, Grouse on the Green has menu items such as shepherd's pie and classic fish and chips, as well as Continental cuisine with a Colorado spin and a variety of microbrew beers.
